Black Tea –  Lapsang Souchong    

Rich • Full-bodied • Invigorating

The Perfect Cup: Bring water to a full boil, add 1 tsp/cup or 1 tbsp/pot to infuser. Steep for 2-4 minutes and enjoy. If you like your tea stronger, steep with more tea and not more time. Tea will become bitter if over steeped.

Iced: Steep with double the amount of tea, 2tsp/cup or 2 Tbsp/pot. Cool, serve over ice and enjoy! You may also try a “cold brew” method by adding the tea to cold water and steeping it for 2-4 hours in the fridge. The tea will not go bitter!

Fragrant and woodsy this Chinese black tea also has clear, strong smoke character. Black tea is placed over pine or cypress wood fires to absorb the flavour! Be sure to try Lapsang for cooking or grind to a fine powder for meat rubs. Reminiscent of a wonderful smokey campfire!
Also try...Smokey Ceasars! Steep 1 tbsp Lapsang in 1/2 cup vodka for 30 min. Strain and use to make Ceasars...garnish with a slice of bacon, pickled bean and celery.
